Fried Chicken and Waffles

Down South cooking from the East side of town….Los Angeles that is.

We are all guilty of having one of those nights where time slips through the cracks and you look down at your watch and see that the small hand is on the 3 and the big hand is placed on the 12.  Are you kidding? I love those moments of my life. Many moons ago I found myself in a small restaurant in Hollywood having a delicious breakfast of Chicken and Waffles, I believe it was around 3 in the morning, and promised myself I would go home and work this delectable meal into my breakfast routine. Just for the record… I keep my promises. Here is a big big endorsement of our love for the chicken and waffle spread.

Fried Chicken and Waffles
Ingredients for waffles:

1 1/2 – cups flour
4 – teaspoons baking powder
1/2 – teaspoon salt
3 – teaspoons sugar
2 – eggs (separate yolks from whites)
1/2 – cup butter (melted and cooled)
1 3/4 – cups whole milk

Directions
Plug in waffle iron and allow to heat…

In a large bowl add flour, baking powder, salt, and sugar. Mix well.

In a small bowl or cup mix yolks, butter, and milk together then pour into
dry mixture.  Mix well to combine.

   

Take the whites of the eggs and whisk them into stiff peaks… Like this.


Then fold the stiff whites into batter. Mix to combine.

 

Take a laddle and a half and pour into your waffle iron and press.
Should take about 5 minutes to become fully cooked and golden!

Let’s move on to the chicken…

Ingredients for fried chicken:
1/2 – cup coarse salt
5 – cups cold water
4 – large boneless skinless chicken breast
2 – cups buttermilk
1 1/2 – teaspoon ground black pepper
1 – teaspoon Lawry’s seasoning salt
1 – cup all purpose flour
1/2 – teaspoon dried basil
1/4 – cup cornstarch
2 – cups vegetable oil or lard

Directions
Pour coarse salt and cold water in a big bowl. Next add chicken breast and cover bowl with plastic wrap and refrigerate for 1 hour.

Remove chicken from bowl. Dispose of salty water. Put chicken back into the bowl and pour in buttermilk. Cover bowl with plastic wrap again and place back in the refrigerator for a minimum of 3 hours or overnight.

Remove chicken breast from buttermilk bath, and cut into 1 1/2 inch strips, then place on a wire rack to rid of excess buttermilk for about 7 minutes.

Meanwhile in a large paper bag add black pepper, Lawry’s seasoning salt, flour, dried basil, and corn starch. Close the top of the bag and shake it up to mix evenly. Now take your sliced chicken strips (a few at a time) and add to the flour mixture. Close the top of the bag and shake it up to coat your chicken evenly.

Then place chicken strips back on the wire rack to sit and absorb flour mixture for 5 minutes.

Pour vegetable oil or lard in a big frying pan over a medium flame and allow to get hot for about 6 minutes. Then working in batches add your chicken strips to pan and fry on each side for 6 to 8 minutes, depending on thickness of the chicken. Once browned and crispy, place on a paper towel lined plate to absorb some of the oil.

Partner your fried chicken with a delicious waffle and who knows… you might end up doing the chicken dance!  I can tell you, we sure have! ENJOY!

    We have a problem over here in the UK that some ingredients are impossible to get. But I have my American friend staying with me so when he wakes up I will show him this delicious-and extremely well written and laid out-recipe and see what substitues we can make.

    I hosted a Chicken & Waffles Supper for my 62nd birthday party this past November – never had them together before, neither had anyone else who attended – and everyone agreed that it was the tastiest combination they had ever tried! We used Belgian waffles and chicken wings, and they were fantastic. My daughter and her family are hosting one for Christmas Eve. I suggest you try it if you haven’t already.

    My husband raved about a restaurant in NY that specializes in this combo. I didn’t have a clue until I had eaten this and needless to say it is a wonderful meal! Did I mention the aroma! The chicken frying and the waffles on the griddle are memorable! Lord know this brings such joy to those that partake!   40. Now that sounds like an interesting fried chicken recipe. Looks like it requires some patience and time – the 1 hour salt water, soak, the minimum 3 hour buttermilk soak, the wire rack rest for the buttermilk, and the wire rack rest for the flour mixture absorption. The use of cornstarch is also interesting.

    Well, I’m game and I plan to try this soon. I bet it will be wonderful.

    I know the waffles are great because I use a recipe very similar except it requires buttermilk and a little bit of corn meal.

  43. I was so completely shocked to see this on Freshly Pressed, because it was only until today that my sister decided to make waffles with our new found waffle maker (it was buried in the garage!)

  47. Everyone knows (now) that the secret to over the top fried chicken is the Lawry’s Seasoning. It is not sold here in Sweden and it stops me dead in my tracks every time… My Mom would be SO disappointed to think that I was trying to carry on without it :( Congrats on Fresh Pressed!     I love chicken and waffles.
    I have a local gastropub that serves this, but I find the waffles there a little insubstantial to accompany fried chicken. I haven’t been to any of the many Chicken and Waffles restaurants so I don’t know what’s traditional but I use Belgian waffles, mostly because I only have a Belgian waffle maker.

  124. I know that buttermilk makes all the difference in the world. My mom made the best fried chicken (just like everybody’s mom, I’m sure) and she always used buttermilk. But, I never tried the combo of waffles and chicken, which I understand is popular in many places–I’ll have to give it a try. Great blog.

  136. Have you ever tried using eggs instead of buttermilk? It’s stickier and causes the flour to stick sooner than 3 hours. I also like to boil the chicken before battering and frying that way I don’t have to fry it as long. Just some things you might like to try. Enjoyed reading your post.

  138. Gladys Night’s Chicken & Waffles in Atlanta, Ga is standing room only outside the doors waiting for a seat. Some will tell you that chicken and waffles was created in Harlem back in the 1930′s but this is far from the truth. The origination goes back to Jefferson bringing a cast iron skillet back from France. Of course you can also follow it’s trail to African slaves in the south. One thing is for sure….it’s not a Harlem creation.

    • There are many arguments over the origin of chicken and waffles. How did a French cast iron skillet marry the two? I’d love to read more about it. One story I’ve heard claims it started in the South (not Harlem) because there were large potlucks after church on Sundays when it was post breakfast and pre lunch (we say brunch, I know). This sounds true enough to me though it may have started long after the dish had been introduced in this country. Most U.S. traditions are rooted in far off lands, but I can’t seem to find anything conclusive on chicken and waffles.

  143. We have a restaurant back where I’m from called Firefly’s and one of their best ordered entrees is the Waffle Lot of Chicken…seeing this post brought me back :) I’m gonna have to use this recipe sometime very soon!

  145. Oh, wow, only in America! I had an American friend, now passed on unfortunately, who was a great cook. When he first introduced me to crispy fried bacon, with cornbread and maple syrup for breakfast, I thought he’d gone crazy — what a combination — I didn’t think my tastebuds could cope, but they did! This reminds me of that episode — not sure it’s good for your health, but sure sounds delicious! :O)

  149. I’ve heard of chicken and waffles for years and like both equally, but never had the two together. I’m a connoisseur of good comfort food and this appears to be a meal that I need to add to my menu.     Impressed by your chicken recipe–similar to my grandmother’s. she made the best chicken in the world. She would brown it on the stove but finish it in a large roaster oven, which made it especially moist. I have simulated the effect by using a covered dutch oven with a small oven-safe dish of water in the middle. Talk about comfort food!

    Mmmmmm… Roscoe’s Chicken & Waffles! Haven’t been there in years, but I remember it well. Such an odd combination, and yet so good. I got my hubby a waffle maker for Christmas, but we haven’t done the fried chicken & waffles yet.

  170. Thanks for the recipe. I’ve been a die-hard chicken and waffles fan since my first trip to Roscoe’s, Hollywood, in the early 90′s. I live in Portland, Oregon now and to my surprise there’s been a surge of restaurants here that offer this irresistible combo! My fave BY FAR is Screen Door. Crispity-crunchy, succulent chicken w/a little kick atop a delicious sweet potato waffle (it may sound unorthodox, but for me it actually beats buttermilk). After two years the wait to get in is still annoyingly long, however, if you ever visit our lovely grey city – this place is not to be missed! Happy New Year.
