Fried Chicken and Waffles

Down South cooking from the East side of town….Los Angeles that is.
We are all guilty of having one of those nights where time slips through the cracks and you look down at your watch and see that the small hand is on the 3 and the big hand is placed on the 12. Are you kidding? I love those moments of my life. Many moons ago I found myself in a small restaurant in Hollywood having a delicious breakfast of Chicken and Waffles, I believe it was around 3 in the morning, and promised myself I would go home and work this delectable meal into my breakfast routine. Just for the record… I keep my promises. Here is a big big endorsement of our love for the chicken and waffle spread.
Fried Chicken and Waffles
Ingredients for waffles:
1 1/2 – cups flour
4 – teaspoons baking powder
1/2 – teaspoon salt
3 – teaspoons sugar
2 – eggs (separate yolks from whites)
1/2 – cup butter (melted and cooled)
1 3/4 – cups whole milk
Directions
Plug in waffle iron and allow to heat…
In a large bowl add flour, baking powder, salt, and sugar. Mix well.

In a small bowl or cup mix yolks, butter, and milk together then pour into
dry mixture. Mix well to combine.

Take the whites of the eggs and whisk them into stiff peaks… Like this.

Then fold the stiff whites into batter. Mix to combine.

Take a laddle and a half and pour into your waffle iron and press.
Should take about 5 minutes to become fully cooked and golden!

Let’s move on to the chicken…
Ingredients for fried chicken:
1/2 – cup coarse salt
5 – cups cold water
4 – large boneless skinless chicken breast
2 – cups buttermilk
1 1/2 – teaspoon ground black pepper
1 – teaspoon Lawry’s seasoning salt
1 – cup all purpose flour
1/2 – teaspoon dried basil
1/4 – cup cornstarch
2 – cups vegetable oil or lard
Directions
Pour coarse salt and cold water in a big bowl. Next add chicken breast and cover bowl with plastic wrap and refrigerate for 1 hour.
Remove chicken from bowl. Dispose of salty water. Put chicken back into the bowl and pour in buttermilk. Cover bowl with plastic wrap again and place back in the refrigerator for a minimum of 3 hours or overnight.
Remove chicken breast from buttermilk bath, and cut into 1 1/2 inch strips, then place on a wire rack to rid of excess buttermilk for about 7 minutes.

Meanwhile in a large paper bag add black pepper, Lawry’s seasoning salt, flour, dried basil, and corn starch. Close the top of the bag and shake it up to mix evenly. Now take your sliced chicken strips (a few at a time) and add to the flour mixture. Close the top of the bag and shake it up to coat your chicken evenly.
Then place chicken strips back on the wire rack to sit and absorb flour mixture for 5 minutes.

Pour vegetable oil or lard in a big frying pan over a medium flame and allow to get hot for about 6 minutes. Then working in batches add your chicken strips to pan and fry on each side for 6 to 8 minutes, depending on thickness of the chicken. Once browned and crispy, place on a paper towel lined plate to absorb some of the oil.
Partner your fried chicken with a delicious waffle and who knows… you might end up doing the chicken dance! I can tell you, we sure have! ENJOY!

our supper last night, minus the chicken. We’ve never tried it that way, but sounds mighty good on a cold, winter’s night. Thanks for posting, enjoy your weekend!
HOLY Crap looks gooooooood
Um. WOW! Sounds incredible — and decadent. Perhaps a new Christmas tradition?
Only if I get the new waffle iron I’ve been BEGGING for…
Love fried Chicken… Love waffles, but I just cant seem to put the two together. Maybe one day. Nice done ladies! and congrats on being Freshly Pressed.
This looks really good!
We have a problem over here in the UK that some ingredients are impossible to get. But I have my American friend staying with me so when he wakes up I will show him this delicious-and extremely well written and laid out-recipe and see what substitues we can make.
It looks very appetizing indeed!!
this is such an excellent idea! a must try
mmmmhhmmmm this looks delicious
i should make it for my family sometime
The photos are mouth watering…I am a vegetarian who sometimes suffers from a hankering from some good fried chicken.I live down south where there is no shortage of fried chicken. I should pass this recipe off to some of my friends.Thank for posting!
Sounds so good thanks for this post
*drool*
Get out of town with that chicken. I’m starving. Love the recipe. I have a great one of my own, but yours has cornstarch, and it got me to thinking. Now I have to try it to see if there’s a difference.

Looks delicious! I’ve been living in the south for more than half a decade, but still haven’t done the whole chicken and waffles thing. I may have to change that . . .

I really want to try that now. I am following this blog. I feel hungry now!
ugh it’s 4pm and I haven’t eaten today…why did I read this?!?!? AHHH!
I’m a southerner and I’ve never had this before. I think there is something wrong with me.
Looks great, thanks for sharing!
i’ve always thought this food combination a bit odd. but after seeing those pictures, i must try before i judge. looks super tasty. i’m all over it…maybe a day after christmas kinda thing. thanks for sharing!
http://www.icouldntmakethisshitup.wordpress.com
Well I’ve never heard of chicken and waffles before? But i gotta admit! that looks so nice! its making me hungry!!
Merry Christmas, the chicken and waffles is something that the people down south in Baton Rouge Louisiana love eating! Looks delicious! Could you possibly post this to my blog to share with everyone there, it would be greatly appreciated!!!
Oh yes! Chicken and waffles, absolutely mouth-watering delicious. Haven’t made them at home, but now I can’t wait to try. Thanks for sharing, and congratulations on being Freshly Pressed.
It’s our tradition to have fried chicken & waffles for Christmas, every time we get the luxury of having it at home in San Francisco. We need a waffle iron, though, so that we can make our own waffles! Thanks for sharing this timely recipe.
This breakfast has always intrigued me. I don’t know why =D I guess since it’s chicken for breakfast. Looks DELISH !
I hosted a Chicken & Waffles Supper for my 62nd birthday party this past November – never had them together before, neither had anyone else who attended – and everyone agreed that it was the tastiest combination they had ever tried! We used Belgian waffles and chicken wings, and they were fantastic. My daughter and her family are hosting one for Christmas Eve. I suggest you try it if you haven’t already.
I’ve always wanted to try chicken and waffles, it looks delicious! Once I get a waffle maker I’ll test out your recipe!
I must have fried chicken, right now. Thanks!
must. try. this. now.
I love waffle…
Looks delicious, will have to try some time.
Chicken & Waffles are a special treat for me. Glad you discovered it. I may just hunt down a good C&W spot and have some before New Year’s.
We have been arguing over where this dish comes from at work (I’m Australian) for about a week now! Thank god your blog was Freshly Pressed so I can go back to my workmates and tell them the south of USA (We had a sneaking suspicion…). I’m not sure about the combo but both components look delicious in themselves, so together must be even better!
!!!! Weird combination, but it looks freakin’ awesome… just have to try it someday… maybe for breakfast tomorrow
anyways.. awesome…
That sounds so good, it made me salivate for chicken and waffles. I’m going to have to try it.
Yum!
good idea! this completely solves the dilemma whether to have lunch or breakfast for the first meal of the day….
Chicken and waffles… I never knew what to think of the pairing before I tried it (about two weeks ago, actually), and I have to say it’s fantastic. Sounds odd, tastes great – perfect mix of salty and sweet. Great post!
My husband raved about a restaurant in NY that specializes in this combo. I didn’t have a clue until I had eaten this and needless to say it is a wonderful meal! Did I mention the aroma! The chicken frying and the waffles on the griddle are memorable! Lord know this brings such joy to those that partake! Thanks for sharing, I think I’ll be a copycat, I’m headed to the kitchen now!
Chicken and waffle are a Detroit favorite! Thanks for sharing your recipe.
Now that sounds like an interesting fried chicken recipe. Looks like it requires some patience and time – the 1 hour salt water, soak, the minimum 3 hour buttermilk soak, the wire rack rest for the buttermilk, and the wire rack rest for the flour mixture absorption. The use of cornstarch is also interesting.
Well, I’m game and I plan to try this soon. I bet it will be wonderful.
I know the waffles are great because I use a recipe very similar except it requires buttermilk and a little bit of corn meal.
Thanks for sharing and congrats on the Freshly Pressed.
Que rico!! se ven absolutamente delciosos! es la primera vez que visito su blog y debo decir que estoy feliz que sean compatriotas…¡felices fiestas! con mucho cariño desde México
ugh! mouth-watering… thanks 4 sharing!
I was so completely shocked to see this on Freshly Pressed, because it was only until today that my sister decided to make waffles with our new found waffle maker (it was buried in the garage!)
I was super excited, and they turned out fantastic. Her batter was a lot smoother and runnier though… yours look just as deliciously fantastic though!
I am hungry now
hi
i love ur blog
pls. visit my blog (http://writer-nathi.blogspot.com/) waiting for ur comment and ideas
thanks
That look amazing and some great photos as well.
Everyone knows (now) that the secret to over the top fried chicken is the Lawry’s Seasoning. It is not sold here in Sweden and it stops me dead in my tracks every time… My Mom would be SO disappointed to think that I was trying to carry on without it
Congrats on Fresh Pressed! Did not make it to my blog in my efforts to gaze at the loveliness on yours!
looks delicious. I love waffles yet I never eat them.
Holy crap!
That looks incredible!
Check out my blog?
love love love love it : ))))) <3
Oh my. Looks heavenly!
(I might be slobbering on the screen in a moment, trying to get through!)
This would be a great Christmas morning breakfast. It’s kind of a tradition for us to make pancakes on Christmas morning.
Wow! They say a picture can say a thousand words, but they may have underestimated your ability to create an absolute craving for chicken and waffles on this fine morning. I’m looking forward to trying out your recipe soon, although I suspect I will be ordering to satisfy the hunger that you have created. Happy holidays, and thanks for sharing the recipe and easy-to-follow directions!
Lovely recipe! Congrats for Freshly pressed! Nice blog!
Awesome!:) Most requested by family and friends!
I love chicken and waffles! My mom used to make a creamed chicken over waffles (kinda like the stuff inside pot pie) and it is also great. I’m a fan of dark chicken meat – would that work?
Creamed chicken over waffles sounds amazing! What brand did she use? Try this dark chicken meat recipe with beer batter waffles…I bet it would be amazing!

I also have a food blog and would love if you could take a look! Maybe I’ll post something about dark meat from chicken! http://foodphotonoob.wordpress.com
I will try this for the New Year.
I am a fan of chicken and waffles, although I’ve never made them at home (together).
I’ve had them at a down home drive through, called Big Mama’s
http://billchance.org/2011/10/12/big-mamas-chicken-and-waffles/
a gourmet food truck
http://billchance.org/2011/09/22/chicken-and-waffles/
and a hip(ish) restaurant called Oddfellows
http://billchance.org/2011/11/23/oddfellows-chicken-and-waffles/
but yours look better than any of them
Thanks for sharing.
Nice!!!
This looks absolutely amazing! As a southern girl, I’m always excited to try new fried chicken recipes. The rest of my family thinks chicken & waffles a very odd pairing, but I bet I make these and they swoon. Thank you so much for sharing the recipe!
looks yummyyy <3
Looks delicious!
Thanks for sharing this classic treat. For gifts you shared, I invite you to visit for a gift under my tree.

I never knew that chicken and waffles go together. It sounds interesting and it looks really good.
I always thought of chicken and waffles as a very unhealthy breakfast but, your pictures and recipe has changed my mind. I love your layout and wish to try this recipe!
I have a blog about food too…I hope you like it as much as I like yours! http://foodphotonoob.wordpress.com
Fried chicken and eggs are good any time of the day. The pictures made this a great post.
I recently gave in to a chicken-and-waffles crave and couldn’t have been happier!
I would have never figured fried chicken and waffles as a breakfast food, but it does look good. thanks for sharing.
Best.Breakfast.Ever.
omg. are you serious!? I have been craving chicken & waffles for like a month & never even thought about making it myself..I LOVE THIS! & yes, I will be copying the recipe! hehe.
Yummy! I suddenly wanted to eat!
looks great.
This is a great combination – something about the sweet and savory that goes together so well. Plus both have Vitamin G (Grease!)! Great pics, great blog name.
I hope i can have both of them right now!!!!!!!

i never thought making waffle is that simple. wow! i really should try this
thanks yah
Look delicious! believe it or NOT, but Ive never had this!! WWWAHHH!!! Looks like i need to get my ass in the kitchen now!
Chicken and Waffles! Quite an interesting combination!
http://topratedjuicers.net/
That looks so good.
what is the deal with chicken and waffles? I have heard of it but never tried it? when did the two get combined?
Sounds like you wandered into Roscoe’s House of Chicken ‘n Waffles…I used to go there every now and then, but when I did I had to be really careful not to hurt myself! I liked my chicken and waffles “smothered” (gravy and onions)…
I love chicken and waffles.
I have a local gastropub that serves this, but I find the waffles there a little insubstantial to accompany fried chicken. I haven’t been to any of the many Chicken and Waffles restaurants so I don’t know what’s traditional but I use Belgian waffles, mostly because I only have a Belgian waffle maker.
Yaay, I love those food pairings which just can’t be tasty together, but actually are delicious. Must have try it. A minute ago I was thinking “Omg, I ate soooo much this Christmas, I don’t have to eat for the whole next week”
But when I saw your recipe, I’m starving, really. Om nom nom <3
MMMMmmm, waffes! Yummy!! This reminds me- I haven’t had waffles in such a dreadfully loooooonnnggg time!:P
Just yesterday I was describing how I’ve rolled out a very comfort food 6-day menu for my visiting nephews (13 & 8 yrs), when it was suggested I look up Fried Chicken and Waffles from Roscoe’s in LA. You’ve made it even easier–thanks!
That is some serious yummy.
Looks awesome!
Sounds good!

Love this post! I need to add this comforting classic combo to my repertoire. Thank you for sharing..
The best meal ever! I used to order this back when IHOP offered it! Love it! Great post!
Yammy !!! Egg roll is my favorite breakfast …. I take breakfast 2 or 3 time in a week ..
Holy crap..look good
oh wow…. look nice and delicious. I want to try this recipe
http://www.anggereview.wordpress.com
In the South we call it “Soul Food”. My first experience with Fried Chicken and Waffles was in Atlanta at “Glady’s Knights Chicken and Waffles”. Wonder if it is still around??? Thanks for the reminder of some mighty fine soul food!
It’s still around!!
Looks fantastic!
I have never had this, but I sure will! THANKS!
Your recipe looks great. I love a good plate of chicken and waffles!
YUM! I love chicken and waffles so much that I have a dog named Roscoe, after the famous “Roscoe’s Chicken and Waffles”
Yes, I’m a little cray cray. Love the post.
hmmm sounds very appetizing
The fried chicken is my favorite. Great work, love to eat this dish.
Mouthwatering. I love how this spells comfort food in CAPITAL LETTERS.
Congrats on making Freshly Pressed!
Only in America? Love the look of it. Chicken, waffles and strawberries. I may try it next time my husband has a hangover. It looks interesting . Thanks for sharing.
Ummmmmm. Que rico
Very interesting combination…looks delicious too!
looks yummy! the first time i had fried chicken and waffles for breakfast was in Harlem during a trip to new york. the combo seemed weird to me at first, but i was wrong. it was delicious!
I love Chicken. I love Waffles. Chicken and waffles are great together. I think I will definitely try this recipe.
Like it Like It !
I was getting ready to eat some grapes and now I want CHICKEN!
Great post!
Delicious idea… The Grand Lux Cafe in Las Vegas has great fried chicken & waffles with pecans. Strawberries look even better.
http://lvbaby.wordpress.com/
Yhummm, this has to be cooked:-D
This looks delicious! I’ve always wanted to try fried chicken and waffles but have never actually gone about making it. I’ll definitely have to try this recipe!
This looks very good! def gon’ try this out soon
reminds me kind of belgium. i am even convinced that they have the most delicious waffles there
Wow it is delicious
Awesome blog! Food is one of my favorite topics, and gotta love the idea you guys have for this blog. Congratulations on getting freshly pressed, and you’ve got a new follower with me.
I am definately going to try out your recipe. If you are ever in NY and wanna try some slammin chicken and waffles go to Melba’s in Harlem. They have the best egg nog waffles with strawberry butter. I always thought I’d have to wait a few years until I got to go to California to Roscoe’s Chicken and Waffles.
yummi. looks to good…
Ooo, I need to get a waffle iron!
this was beautiful ! I love both things. lol follow me on twitter @LaDerrickJr I follow back. if you have one
looks so good!
I know that buttermilk makes all the difference in the world. My mom made the best fried chicken (just like everybody’s mom, I’m sure) and she always used buttermilk. But, I never tried the combo of waffles and chicken, which I understand is popular in many places–I’ll have to give it a try. Great blog.
I am going to try this one of these weekend, Santa seemed to send me a message this year, waffle iron, mixer, crock pot and espresso machine… Not sure what he’s trying to say but I might as well make my peace with the kitchen and this seems like a good recipe to begin with. Lovin the blog ladies, do you have restaurants? We’re in E. L.A. a lot and it’s hard to come by anything that is not Mexican.
Ok maybe it’s just me, but this is nothing new being born and raised in the south. But I will say this…your pictures are to die for!! I’ll be back for more

I just discovered your blog, and I love it! This is such a cute post, and I love the step by step pictures. I’ll have to nose around and look for more posts I’ll love!
Looks real yummy!! This is a great combination I’ve never thought of
Thanks for sharing this!:) Congratulations on being on Freshly Pressed!:)
How fun to wake up to this blog thanks for the LOVE!
This looks super yummy. I know what I’ll be making for the family on Saturday morning. : )
LOOOOOOVE this. We’re from down south to, and there’s nothing better than fried chicken in the morning. Your recipe tops it off! Keep up the good work!
OMG never thought to try chicken AND waffles together! But the dish looks delicious! Such a colorful and tasty meal:)
Sounds good. Def a popular southern dish! 1coffeehouse.wordpress.com
Chicken and waffles never appealed to me…before now! I’m thinking I might have to change my dinner plans tonight!
I am droolin’ like crazy right now. I’ve had C&W before, though I have yet to fix myself a plate. Nice glass of OJ would go well with this!
Have you ever tried using eggs instead of buttermilk? It’s stickier and causes the flour to stick sooner than 3 hours. I also like to boil the chicken before battering and frying that way I don’t have to fry it as long. Just some things you might like to try. Enjoyed reading your post.
How can a combination that is so utterly wrong look so delicious together? Congrats (on your freshly pressed status and making great food, which I’m still not completely convinced of since I haven’t tried it.) Check out my blog at:

Gladys Night’s Chicken & Waffles in Atlanta, Ga is standing room only outside the doors waiting for a seat. Some will tell you that chicken and waffles was created in Harlem back in the 1930′s but this is far from the truth. The origination goes back to Jefferson bringing a cast iron skillet back from France. Of course you can also follow it’s trail to African slaves in the south. One thing is for sure….it’s not a Harlem creation.
There are many arguments over the origin of chicken and waffles. How did a French cast iron skillet marry the two? I’d love to read more about it. One story I’ve heard claims it started in the South (not Harlem) because there were large potlucks after church on Sundays when it was post breakfast and pre lunch (we say brunch, I know). This sounds true enough to me though it may have started long after the dish had been introduced in this country. Most U.S. traditions are rooted in far off lands, but I can’t seem to find anything conclusive on chicken and waffles.
Man, I don’t think anything beats chicken and waffles, it sounds crazy before you eat it, but it’s like a match made in heaven. Anyone who hasn’t eaten this yet hasn’t lived.
I came from the Dirty South and before I went Flexitarian I had GREAT Southern Chicken and Waffles. Now I eat Fried Fish & Waffles.
Yummy!! Good combination =)
Cheers form Brasil!!
This is good any time of day… 3 am or 3pm
We have a restaurant back where I’m from called Firefly’s and one of their best ordered entrees is the Waffle Lot of Chicken…seeing this post brought me back
I’m gonna have to use this recipe sometime very soon!
Great recipe, that looks wonderful. I can’t wait to try it.
Oh, wow, only in America! I had an American friend, now passed on unfortunately, who was a great cook. When he first introduced me to crispy fried bacon, with cornbread and maple syrup for breakfast, I thought he’d gone crazy — what a combination — I didn’t think my tastebuds could cope, but they did! This reminds me of that episode — not sure it’s good for your health, but sure sounds delicious! :O)
>0<…………………..
Will try it soon
My weaknessssss: salty and sweet all in one!!! Thank you for the post. I myself enjoy going to Roscoes in Long Beach and/or Hollywood. Fried Chicken and Waffles touches the heart. =)
I’ve heard of chicken and waffles for years and like both equally, but never had the two together. I’m a connoisseur of good comfort food and this appears to be a meal that I need to add to my menu. Happy dining to you and I’ll let you know when I taste my new item on “my anytime of the day menu” of waffles and chicken. Happy dining to you!
Amazing pictures
Look delicious!
thumbs up!
-Chef Dominique
This is amazing! I will try it at once! <3 waffles!
This recipe will be my first 2012 breakfast
thank you
pleasure to me if you reply
Impressed by your chicken recipe–similar to my grandmother’s. she made the best chicken in the world. She would brown it on the stove but finish it in a large roaster oven, which made it especially moist. I have simulated the effect by using a covered dutch oven with a small oven-safe dish of water in the middle. Talk about comfort food!
Great pictures…. makes me want to have an early lunch or a second breakfast!
Looks SO delicious. Cannot wait to try it!
OMG I was already hungry and then I looked at this uuuuggghhh the stomach pains LOL
Living in a dorm room I’ve missed this kind of food. It looks delicious!
Hej from Sweden,
Waffles and Chicken a truly American classic ! I will have 2 orders , please !!!
can’t wait to give this a try, i know my wife will dig it and my 2-year old loves waffles
Mmmmmm… Roscoe’s Chicken & Waffles! Haven’t been there in years, but I remember it well. Such an odd combination, and yet so good. I got my hubby a waffle maker for Christmas, but we haven’t done the fried chicken & waffles yet.
First time I heard of chicken and waffles was two NBA players who visited a diner in LA. Interesting combo of food. Sweet and savory old-school!
http://pattyabrdotcom.wordpress.com = The Fearless Cooking Club
Congrats on FP and Happy New Year 2012
Yum! What more can I say.
That looks so good! My last meal in 2011 happened to be Chicken & Waffles! Seeing this post made me remember how much I loved dinner, and the restaurant we had it in.
Thanks for a great post
Salty and sweet. Sounds good to me!
Looks delicious! reminds me of my moms chicken & waffles!
I love Breakfast!!
what a fantastic title for a blog post! to be honest, that was the whole reason i clicked on it in the first place! sounds like a tasty combination to me…
you have a lovely blog, and happy new year!
-alexandra
Thanks for the recipe. I’ve been a die-hard chicken and waffles fan since my first trip to Roscoe’s, Hollywood, in the early 90′s. I live in Portland, Oregon now and to my surprise there’s been a surge of restaurants here that offer this irresistible combo! My fave BY FAR is Screen Door. Crispity-crunchy, succulent chicken w/a little kick atop a delicious sweet potato waffle (it may sound unorthodox, but for me it actually beats buttermilk). After two years the wait to get in is still annoyingly long, however, if you ever visit our lovely grey city – this place is not to be missed! Happy New Year.
I don’t get the whole chicken and waffles thing…I believe it to be another one of those American food things I will never understand…but enjoy!
That’s so yummy! I want to try this at home, but I don’t have a waffle pan
dear god, that looks amazing
i jsut got hungry from just eating… i mean from just watching the picture
i would eay that every day
That sounds… interesting. Going to try it now
Oh my goodness this one for trying. I want waffles bad now!
YUMMY NOM!
I think this is among the most vital information for me. And i am glad studying your article. But should observation on few general issues, The website style is ideal, the articles is actually great : D. Excellent task, cheers
